Sono nato e ho vissuto più di trent’anni dentro un’osteria. Il cibo preparato da mia madre era per i forestieri, qualche commesso che passava per questi paesi, per gli operai delle ditte. Un mangiare fatto per chi aveva fame, per chi doveva riprendere le forze. Adesso ai ristoranti si chiede creatività, si cerca un’esperienza che passi attraverso il cibo. L’associazione dei Mesali ha questa missione: portare a tavola persone curiose di esplorare un territorio bellissimo come l’Irpinia e allo stesso tempo di trovare cibo buono, cucinato con estro. I nostri luoghi hanno bisogno di intrecciare l’antico e il nuovo. Vale per la politica e la cultura, vale anche per la gastronomia. La rottamazione del passato, che ha rischiato di farci dimenticare anche le eccellenze della nostra terra, è cosa superata. E anche la corsa un po’ velleitaria verso la modernità, verso l’imitazione di modelli esterni, si è fortunatamente molto attenuata. L’associazione dei Mesali è importante proprio per questo, perché, prima e meglio della politica, ha intuito la necessità di questo intreccio che tante volte ho riassunto nella formula di coniugare il computer e il pero selvatico. Insomma, coi Mesali siamo di fronte a cuochi che fanno anche un lavoro politico. Questa è una novità importante e va salutata con piacere. Non a caso l’associazione partecipa a Cairano 7x, un grande evento culturale d’avanguardia che nasce nel paese più piccolo dell’Irpinia...

I was born and lived for more than thirty years in an osteria. The food my mother prepared was for travelers, shop and factory workers who would pass through. It was food for hungry people, those who needed energy. Now in restaurants people look for creativity, an experience through food. The Mesali Group has a mission: to bring people to the table who are curious to explore a beautiful region like Irpinia and who at the same time look for good food, made with inspiration. Our restaurants must combine the old and the new. This is true for politics and culture, as well as for gastronomy. The phase of breaking with the past, which ran the risk of making us forget the excellence of our land, is a thing of the past, and therefore the somewhat unrealistic race towards modernity, towards the imitation of external models, has fortunately subsided. The Mesali Group is important for this very reason, because it sensed the need for that combination of old and new, a combination that I have often equated to combining a computer and a wild pear tree. With Mesali we find ourselves faced with cooks who also have a political function. This is an important new development and should be seen as a positive thing.
