L’associazione Mesali riunisce ristoratori irpini che, in un clima di amicizia e rispetto reciproco, si pongono come scopo l’interpretazione e la divulgazione della tradizione culinaria del proprio territorio. Le condizioni per essere ammessi a questa grande famiglia della buona tavola sono particolarmente rigide e testimoniano la serietà nel difendere e promuovere la gastronomia irpina. Per far parte dell’associazione bisogna avere i seguenti requisiti:
1) Il ristorante deve essere in possesso di licenza per la somministrazione di alimenti e bevande nei pubblici esercizi.
2) Il ristorante deve avere esercitato l’attività per almeno 5 anni nel territorio irpino.
3) Il menù e la carta dei vini non devono contenere le voci “servizio e coperto”.
4) La carta dei vini deve prestare particolare attenzione ai prodotti di aziende irpine, i soci si impegnano a proporre incarta anche una degustazione a calice.

The Mesali Group joins together Irpinian restaurants who aim to interpret and spread the culinary tradition of their homeland in a climate of friendship and reciprocal respect. The guidelines to follow in order to be admitted into this family of good eating are particularly rigid and are a testimony to how serious the association is about defending and promoting Irpinian gastronomy. To become a member of the association restaurants must meet the following requirements:
1) The restaurant must possess a license to sell food and beverages in public places.
2) The restaurant must have been in existence for at least five years in the region of Irpinia.
3) The menu and the wine list cannot contain the phrases “service and cover charge.”
4) The wine list must have a particular focus on the products of Irpinian wineries, and the owners must also offer wines by the glass.
